You can play gen 1 and gen 2 on original hardware on 2x and even 3x speed. You can play them on Pokémon Stadium on Nintendo 64 which has special hardware to insert the Game Boy modules. You have to unlock the Doduo and Dodrio modes first by finishing parts of Stadium’s tourneys but then you have an official way to play the original games sped up.

So I had to look it up, but Pokémon Stadium actually used an emulator to run the Gameboy games source 1 and source 2.
So while that method is probably Nintendo approved, I think it’s probably easier (and more accurate emulation) to use a modern emulator.

No, you should get a switch emulator and use Nintendo online to emulate Pokémon Stadium so you can emulate the Gen 1 games.
Although I suspect the switch N64 emulator doesn’t support the Gameboy adapter.
