And here “western” excludes at least Finland, Estonia, Netherlands, Scotland, Sweden, Norway, Denmark, Austria, Germany, Poland, France, and England.

I think you mean shocking to american sensibilities. Most western countries have similar sorts of food, i.e black pudding in England.

Blood sausage and blood pudding is a thing in most European countries. It is not shocking to Western sensibilities. Did you mean American sensibilities?

Eh, we still remember the old ways. So it’s not so shocking. We made fried pigs brain sandwiches a thing for example. Crispy outside, creamy insides.

Poverty = waste not want not when it comes to food.

English style blood pudding is delicious with brekky. Had it for the first time in Scotland a few years back and now I buy it when for a big breakfast cookup on weekends.

Try Johnny cakes while youre at it. Cornmeal and a pinch of salt, mix in boiling water until you get a thick batter, then fry it up like a pancake. You can add egg or blood as you see fit.
