[Total Carbs] captures everything carbohydrate-related in a single number: starches, fiber, natural sugars, added sugars, and sugar alcohols. You won’t usually see “starch” listed as its own line, but it’s baked into the total. If a serving has 37 grams of total carbohydrate, 4 grams of fiber, and 6 grams of total sugars, the remaining 27 grams are mostly starch and other complex carbohydrates that don’t get their own line.
Why isnt there its own Starches subline?
They probably figure people will do the math, or because carbs might have different testing methods to accurately pin point each type of carb they don’t bother with breakdown percentages
Total Carbohydrate is calculated by subtracting protein, fat, moisture, and ash from the total weight of the food.
Dafuq is “ash”?

Ash in a food is anything that is not a nutrient we directly use for energy. It’s basically all the minerals such as calcium, potassium, etc. Not like campfire ash, don’t worry.
It makes sense when you think about it this way: if you incinerate a sample of food, all the energy nutrients (proteins, fats, carbs) and water content burn away, leaving behind the noncombustible minerals. Since it is left behind by the fire, we call it ash.
Calories are counted by literally burning food and counting how much energy is created from the fire. “Ash” is probably literal ashes.
